Ingredients

  • 2 cups dried chickpeas, soaked overnight

  • 8 cups water

  • 1 tablespoon oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander seeds

  • 1 teaspoon red chili powder

  • 1 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1 teaspoon amchur powder (optional)

  • 1 teaspoon salt, or more to taste

  • 1/2 cup chopped cilantro

  • 1/2 cup chopped green chilies

  • 1/2 cup chopped onions

  • 1/2 cup chopped tomatoes

Directions

  • Rinse the chickpeas and drain well.
  • In a large pot, combine the chickpeas and 8 cups of water. Bring to a boil, then lower the heat and simmer the chickpeas for an hour, or until they are cooked through.
  • While the chickpeas are cooking, heat the oil in a large skillet over medium heat. Add the cumin seeds and coriander seeds and cook until fragrant, about 30 seconds.
  • Add the red chili powder, turmeric powder, garam masala, amchur powder, and salt to the skillet and cook for 1 minute more.
  • Cook the onions in the skillet for 5 minutes or until they are tender.
  • Add the tomatoes to the skillet and cook until they are soft and mushy, about 5 minutes more.
  • Add the cooked chickpeas to the skillet and stir to combine.
  • Cook the chole for 5 minutes more, or until heated through.
  • Stir in the cilantro and green chilies and serve hot with puri or naan.
