  • In a big pot, warm the oil over medium heat. Add the bay leaf, cardamoms, cloves, cinnamon stick, and star anise. Fry for a few seconds until fragrant.
  • 5 minutes should be enough time to soften the onion after adding it. Cook for one more minute after adding the ginger-garlic paste.
  • Add the tomatoes and cook until they are mushy, about 5 minutes.
  • Add the mutton, turmeric powder, coriander powder, cumin powder, red chili powder, garam masala powder, and salt. Mix well.
  • Add the yogurt and water. When the mutton is tender, simmer for about an hour over low heat after bringing to a boil.
